A Delightful Dessert Display

There's something magical about a beautifully arranged dessert table, and this one was no exception. As I approached, my eyes were immediately drawn to the array of treats that promised a sweet escape from the everyday hustle and bustle. The centerpiece of the table was a stunning assortment of macarons, neatly piled in a silver bucket, each one a delicate bite of bliss. The macarons came in a rainbow of pastel colors, from soft lavender to pale yellow, and everything in between. Each one whispered of flavor—whether it was rich chocolate, zesty lemon, or the delicate essence of vanilla, they were all waiting to be savored. Next to the macarons were rows of perfectly piped cupcakes, each topped with a swirl of creamy frosting. What made these cupcakes stand out was the thoughtful addition of a small spoon inserted into each one. This small touch transformed a simple dessert into an elegant, ready-to-eat indulgence, perfect for those who wanted to dive right in without the fuss of a plate and fork. The table also featured a selection of other delightful desserts, including what appeared to be homemade ladyfingers, dusted with powdered sugar, and squares of layered cake that looked like they were bursting with flavor. Each item was carefully placed, creating a harmonious balance that was as pleasing to the eye as it was to the palate. White Chocolate fudge


White Chocolate fudge

 

Preparation time 15 minutes

Cooking time : 7 minutes

Makes about 50 chocolates

 

Ingredients:

1 1/3 cup sugar
2 tablespoons unsalted butter
Salt to taste
1/2 cup evaporated milk
1 vanilla bean
10 oz white chocolate chopped
1/2 cup shelled, peeled pistachio nuts
1/2 cup sliced almonds

 

Grease a 7 or 8 inch square cake pan.

Mix sugar, butter, salt and evaporated milk in a large saucepan

Split the vanilla bean in half lengthwise and scrape the small black seeds into the sauce pan.

(You can substitute vanilla bean with 1/2 teaspoon vanilla extract)

Add the bean to the saucepan and boil it over medium heat, constantly stirring with a wooden spoon.

Lower the heat and simmer for about 5 minutes, still continue to stir.

 

Remove the saucepan from the heat and lift out the vanilla bean with a fork.

Stir in the chopped chocolate until the mixture has melted with a smooth consistency.

Add almonds and pistachios and stir in the pan.

Refrigerate until chocolate is firm.

 

Cut into small squares and serve in confectionery wrappers.

 

You can store the fudge upto one week in a refrigerator.

Recipe for Raspberry and Hazelnut Roll.

2 Cups Hazelnuts 13/4 cup Whipping cream
 5 eggs (separate egg whites & yolk) 2 1/4 cup Raspberries
1/2 cup superfine sugar Mint leaves for Garnish (if desired)
  • Preheat oven to 350F (180C)
  • Line a Jelly roll pan with double layer of aluminum foil and oil thoroughly
  • In a food processor , process the hazelnuts until finely ground
  • In a large bowl, whisk the egg yolks and superfine sugar until thick and creamy.
  • Add ground hazelnuts to egg yolks and sugar mixture.

  • In a separate bowl whisk the egg whites until firm, but not dry. Mix it with the nut mixture.
  • Pour the nut mixture onto the prepared pan and spread evenly. Bake for 15 to 20 minutes, until risen & firm to the touch.
  • Cover with a damp towel, and leave it overnight.

  • Next day , transfer the cake out onto a sheet of aluminum foil thickly dusted with superfine sugar
  • Peel off the foil
  • In a bowl whip 1.1/4 cup of cream until stiff.
  • In a separate bowl lightly crush 1/2 cup of Raspberries, then mix them into whipped cream
  • Spread the Raspberry cream over the cake.
  • For decoration dot the raspberries over raspberry cream.
  • Then roll up the cake with the help of the foil. Thereafter transfer it to a plate.
  • Whip the remaining cream until thick
  • Slice roll and serve with Whipped cream.
  • Garnish individual servings with additional raspberries and mint leaves if desired.
  • Serves : 6
